ingredients:

1 C soaked cashew,

1/3 c apricots,

¼ C coconut cream

2 tbl golden flax seeds,  

2 tbl raw honey

1 tsp vanilla 

¼ C unsweetened shredded coconut for rolling

 variation:

Add ¾ tsp fresh ginger or 1/8 tsp of nutmeg

 directions:

Soak cashews 2-3 hours

Dry on a paper towel and

Place in food processor with all ingredients to chop and blend.

Grind the flax seeds in herb grinder or vita mix before adding

Form into balls using a 1 Tablespoon of mix

Roll in shredded coconut and place in refrigerator to firm
