Our Savory Broccolini frittata uses the same immune enhancing ingredients as the Broccolini Mushroom soup recipe to create a rich lively infusion of flavors. Perfect for a cool Winter day as the sesame oil, ginger and seasonings are warming, while the broccolini and mushrooms are deeply nourishing. The bold flavors in this frittata full-fill an eager appetite and make an excellent choice as a main dish for any meal.

Saute in a pan

1 T. Sesame Oil
1 T. Toasted Sesame Oil
1/4 c. Red Onion
1 T. Shallots
1/2 T. Raw Ginger
1 c. Shitake Mushrooms
1 Bunches of Broccolini (2 cups)

Mix in a bowl
6 Farm Fresh Eggs beaten
1/4 c. Coconut Milk
1 T. Coconut Aminos
1/4 t. Smoked Paprika
1/8 t. Real Salt
1/8 t. Caribbean Masala Or a dash Cayenne

Preheat oven 350
Place pan on medium heat and add 1 Tablespoon each of Sesame and Toasted Sesame oils in pan with 1/4 cup finely chopped onion,
1 Tablespoon of finely chopped or coursley grated shallot and 1/2 Tablespoon of grated raw ginger in pan and let sauté’ for about 15 minutes.
While this is cooking, wash and chop the broccolini into bite size pieces or smaller.
Add the broccolini and saute’ for another 3-4 minutes.
Broccolini should be bright green and just a little bit soft as it will cook more in the oven

Crack 6 eggs into a bowl (5 is you are using duck eggs)
Beat with 1/4 cup of Coconut milk, 1 Tablespoon Coconut Aminos, 1/4 teaspoon of Smoked Paprika, 1/8 teaspoon Real Salt and a 1/8 teaspoon of Caribbean Masala Or dash of Cayenne.

Place the vegetable mixture into a well-oiled dish like a glass pie pan or glass pyrex. No- stick baking dishes work just as well. I love my enamel Crueset.
Pour over the egg mixture and distribute evenly to cover all of the vegetables.

Bake @350 for 20 minutes or until it is baked through and firm in the center.
Test by using a knife in the middle to feel how it is cooked all the way through.
It will continue to set when you remove from the oven so try not to over bake.
