Fresh Almond Cream and Fresh Almond Meal


2 c. Raw Almonds (soaked)

3 c. Purified Water

1 Nut milk bag or Fine mesh medium size strainer

Variation: Add 1 t. Vanilla extract 1 T. maple syrup or monk fruit and a pinch of Real Salt


Soak 2 cups of Raw Almonds in 4 cups of Purified Water and add 1/2 teaspoon of vinegar or lemon juice. Soak the Almonds in water for 6-8 hours, rinse and drain. If you are not ready to make your milk simply store the almonds in the refrigerator until you are ready to make the milk. Be sure to rinse them once a day to keep them moist and happy.

To make the milk place the soaked almonds and 3 cups of purified water in a blender. Blend on high for 1 minute to make a creamy smooth mixture. Place the nut milk bag over a medium size bowl and pour half of the blender into the bag, closing the top of the bag and using your hands to squeeze the cream out of the nut mixture. Pour the rest of the contents into the bag and repeat the process. If you are using a strainer the back of a metal spoon will help to press the milk through the sieve. Also pour only half or a third of the blender in the strainer at a time.

Place the milk in a mason jar with a lid and add 1 teaspoon Vanilla extract and 1 Tablespoon of Maple Syrup or Monk Fruit and a pinch of Real Salt if desired. Shake the jar to mix the ingredients together. Store the almond meal in a close container until you are ready to make one of the Temple Taste recipes that calls for Fresh Almond Meal.
