Another version of my favorite Vegan style low sugar super yummy cookie. Orange and Cacao so outrageously yummy. And Almond flour makes them a good source of protein and nutrition. Real food for real living..
2 T. Chia seeds (soaked)
½ c. Purified water
2 c. Almond flour
½ c. Coconut flakes (fine)
½ c. Cacao nib enrobed in dark chocolate or dark chocolate chips
1 t. Temple Taste Persian Masala
½ t. Baking soda
½ t. Baking powder
¼ t. Real salt:
¼ c. Coconut sugar or golden monk fruit (sugar free)
¼ c. Virgin coconut oil
2 T. Unsalted butter
1/4 c. Orange juiced
1 T. Orange zest
2 t. vanilla extract
Variation: For deeper dimension of flavor add 2 drops of Doterra Sweet Orange oIl
Place 2 Tablespoons chia seeds in small bowl or jar with 1/4 c. purified water. Stir them into the water and soak for a few hours or overnight.
Pre-heat the oven at 350
Place the bowl of soaked chia seeds, 1/4 cup coconut oil and or butter, 1/4 cup sugar or golden monk fruit, 1 generous Tablespoon of grated Orange peel, 1/4 cup Tablespoons Orange juiced and 2 teaspoons vanilla extract in a blender or bullet blender. Whirl together enough to grind the seeds and mix the ingredients into a slushy liquid. In a bowl measure the 2 cups almond, flour, 1/4 cup coconut flakes, 1 teaspoon Temple Taste Persian Masala, 1/2 teaspoon baking soda and baking powder, 1/4 teaspoon real salt. Mix the dry ingredients before adding the wet ingredients. Add the liquid ingredients to the bowl, using a small spatula to clean out the blender. With a large spoon meld the wet and dry ingredients together to make a dense mass of cookie dough.
Grease cookie sheet with coconut oil or use parchment paper. Using a round tablespoon scoop out a spoon full of dough and flatten it into the spoon and use your fore finger to elegantly scoop it out and place on the sheet. The cookies shape will look like a round disc. If dough is not sticking together use your hands to squeeze and form round cookie shape. Top with Coconut Flakes.
Bake 15-18 minutes or until golden brown. Cookies are soft and round when removing from oven but will firm after cooking. Do not expect them to flatten out. Let cool 15 minutes before removing to serving plate or storage container.
