I love how easily this healthy meal comes together. And how satisfying it is to eat every time! The vegetable saute’ enriches the flavors of the Seasonal spice blends and makes this dish a one pot meal. Best of all it does not require a lot of time to prepare, but feels like a substantial meal. Goodbye to canned soup and over-salted mediocre take out. One of the reasons I developed the Temple Taste Masalas and paired them with Organic Heirloom Lentils.  Enjoy the Taste of the Season!

Ingredients:
4 c. Purified Water
1.5 c. Golden Heirloom Lentils with 1/2 t. Temple Taste Digest Ease
2 T. Olive Oil Virgin Coconut Oil or Ghee
1 c. Red Onion chopped
1 c. Fennel minced (1 small bulb chopped)
1.5  c. Garnet Yam grated (1 medium yam)
1 T. Temple Taste Golden Masala , Magical Masala  or Essential Masala   
Add: Real Salt about 1/2 t. and Cayenne to taste
Garnish: 1/4 cup Fresh Cilantro minced and yogurt if desired
Preparation Notes: Time 25 minutes 6 Servings
Directions:
Rinse lentils and place with 3 cups. water in a large pot. Place on medium heat and bring to a simmer. Remove foam and add 1/2 teaspoon of digest ease to improve digest-ability. Set timer for 20 minutes.
Note: To remove the lectins from the lentils you can soak for a few hours with a squeeze of lemon or a teaspoon of vinegar before Rinsing and cooking. (Lectins can impede digestion and increase inflammation for some individuals.)
While lentils are cooking wash and peel away or scrape the outer skin from the following vegetables. 1 medium red onion, 1 medium fennel bulb, and 1 garnet yam.
Chop the onion and fennel and place in a medium pan with 2 Tablespoons oil.
On medium heat saute’ onion and fennel until it is translucent stirring as needed 5-8 minutes.
While onion mixture is cooking grate the garnet yam with a medium blade.
Stir in the grated sweet potato and cook the vegetable mixture for a few more minutes.
Add the Tablespoon of Temple Taste Masala at the end and turn off heat
Once the lentils are finished they should be soft and tender (takes 20-25 minutes)
Stir the vegetable mixture into the lentils and shut off heat.
Allow to sit for 5-10 minutes with the lid cracked slightly open before serving.
Garnish with Cilantro and yogurt if desired.
