This high protein combination makes for a light and easy meal anytime.

ingredients:

1c. red quinoa

1c. wild rice

4 c filtered water

1 t. magical masala

1 orange or tangerine juiced

1/2 c. virgin olive oil

1 T. braggs liquid aminos 

1 T. coconut aminos (optional)

a dash of garlic powder

1/2 c. chopped raw pumpkin seeds

1/2 c. chopped cilantro

1/2 c. chopped cranberries

1 c. grated sweet potato 

salt to taste

directions:

Rinse and drain the quinoa and wild rice. Place on stove in medium sized pot with water, bring to a boil and lower heat to simmer for 25- 30 minutes or until the water has been absorbed by the grains. Add masala mid-way through cooking or at the end.

 

Set aside and allow to cool before adding the remaining ingredients. Stir together and  serve warm, room temperature or cool over a bed of spinach and arugula. 

options: toast pumpkin seeds and or add chopped scallions. Extra dressing as desired.
