These little nuggets of joy are packed full of protein, inexpensive to make and add a satisfying finish to a light summer meal.

1 c sunflower seed butter (unsweetened is my favorite)
1/2 c. ground raw sunflower seeds
1/2 c. unsweetened coconut flakes (finely shredded and or ground finely)
1/4 c. raw honey (maybe more or less depending on if the seed butter is sweetened)
1/2 c. dark chocolate chips
1 t. vanilla extract
1 c. crispy rice cereal

Grind raw sunflower seeds and coconut in a coffee or herb grinder or Vitamix.
Combine all ingredients in a bowl, mix together well.
For variations add additional ingredients i.e. sweetener, raisins or spices such as cardamom or cinnamon if desired.
Easy to add a little more of this or that to get the right consistency to make rolling into balls easy.
For a finishing touch roll balls in finely shredded coconut.
Easy to keep a sealed tuper-ware un-refrigerated.
