Italian Style Bison Balls

Serves approx. 5


1 lb ground bison

1/3 cup finely chopped red onion

1 clove of elephant garlic (1 heaping Tbl grated or finely chopped)

Or 2-3 Tbl of fresh herbs basil, oregano, thyme finely chopped.

1 Tbl dried Italian herbs or herbs de provence

A dash of cayenne

2 dashes smoked paprika (optional)

½  tsp salt


Sauté onion and garlic for 5-10 min on low

Add herbs, salt, cayenne and paprika last few minutes

Mix with ground bison and form balls.

Place on parchment paper on cookie sheet.

Pre-heat oven Bake 350 for 10-15 minutes.

Note: bison balls can also be cooked on the stove in a covered pan on low with 1 tbl grapeseed oil.
